So I got a wild hair to do some serious cooking this weekend. We had surprise snow on the mountain, so something warm & hearty was in order. Additionally, the art school is on Spring Break & we’re hosting a student from Costa Rica (who’s sick of dining hall food) so we have all the more reason to whip up a good home-cooked meal… something fun & vibrant, hmm…
We settled on Puerco Pibil, a dish featured in Once Upon a Time in Mexico. We’ve made this a couple times before & it’s a real crowd-pleaser. It takes a bit of work, so to be sure we have enough to go around we’re making 7 pounds of it!
Check out the video: In the movie, this recipe tastes so good that for some reason the CIA agent is inspired to kill the chef. (I’ll be watching my back!)
The fixin’s: at this point I’d already ground up all the spices. The Stella off to the side is not necessary, but recommended. Perhaps a Corona or a Pacifico would be even better?
The pork is marinading overnight. We’ll give an update once it’s served, either with arroz con frijoles or my mom’s “green rice” recipe. Listen for the dinner bell!
In bike news: The shop will be bumping over these next two weeks. We’re working on a “hot” frame right now, something similar to what we’ve been doing but with a twist. Stay tuned!
